Without a pharmacy, they would find their own ingredients and possess extensive knowledge of herbalism was essential. You will find any serious spell caster grows their own ingredients or at least knows where to find them.

The traditions of herb and moon lore, learned by witches, were usually oral and were passed down and adapted through time.
